Going For the Gold Cup4Cup

Living in Ashburn I have noticed that the outdoors are a huge part of most of the community activities. We have beautiful lakes and paths for walking, running, and bike riding everywhere. When I moved here I knew I wanted a bike. So when summer came around I was sure to ask for one for my birthday.
When I finally got my bike I was so excited! I had to hit the W&OD. I haven't had a bike since Bobby Brown was number one on the radio. That was a while ago. Even with all that time gone by, I picked that bike up and rode out!
I was gone. I love the freeing feeling I get when riding.
The wind whipping through my hair, just zoning out to the beauty around me and the music helping me coast on.
To the point of my bike story is I had heard about this four that William Sonoma sold, Cup4Cup.
From the reviews this flour was the best substituion literally cupv4 cup when replacing gluten free flour inplace of white flour. Now in the gluten free world there is no such thing as simply replacing gluten free flour in place of regular flour. This almost always turns out in a baking disaster or a product that didn't taste as good as the original gluten product. I have tried quite a few gluten free flours. Gluten Free baking is trial error process. The easier the process is when baking gluten free, the better.
I then began my mission to find Cup4Cup. I knew that I could find it at William Sonoma, I also knew that there was a William Sonoma in Reston Town Center. which is a 10 mile ride one way. Cup4Cup is about $20 bucks for a 3lb bag! That's a bit pricey for my budget. I told myself If I really wanted it, I was gonna have to bike for it.
I had not rode that far yet, I had only gone to Herndon.Yet I was determinded to make it to The Reston Town Center,  I wanted to try cup4cup that bad!
I already had picked out the first recipe that I was gonna use. I was determied. To my surprise it wasn't that bad of a ride. Yes there were a few up hill battles, not as many as I was expecting.
I came home with over a thousand calories burned, legs feeling a little more toned and ready to bake some cookies. Ha,ha,ha, will bike for cookies.
I got my apron on and went to work.
I instantly noticed the consistency of the dough. It wasn't sticky and thick. It actually looked like "normal" cookie dough. I just had to do the dough taste, It was yummy. Not grainy and no gross after taste.
I remixed a Sprinkle Sugar cookie from a recipe I found on pinterst.
Cup4Cup is amazing! The cookies came out crispy on the bottom and chewy in the middle. They had a sweet almond taste, not a horrible bland flavor at all.  I am not a HUGE sugar cookie fan. I am a Chocolate Chip Cookie fiend, but these had me going back to the jar a few times. :)
If you're gluten free or not, I totally recommend Cup4Cup. The price is a little steep if you ask me. I still think its worth a 20 dollar price and a 20 mile ride.

Sprinkle Sugar Cookies

2 sticks butter, at room temperature 
1 1/4 cups granulated sugar
2 teaspoons vanilla extract 
1/2 teaspoon almond extract 
1 large egg
2 1/2 cups Gluten Free Flour Cup4Cup
1/4 cup cornstarch
3/4 teaspoon baking soda
1/2 teaspoon salt
Heaping 1/4 cup sprinkles


Prep.
Preheat oven to 375 degrees. Line a cookie sheet with a Silpat baking mat or spray with baking spray. Set aside. 
Mix. In the bowl on a stand mixer, cream together the butter and sugar until light and fluffy, about 2 minutes.Add the vanilla, almond extract, and egg and mix until well-combined. 
Whisk. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt. Slowly add to the wet ingredients, mixing on low speed until thoroughly combined. 
Sprinkles! Gently stir in the sprinkles, being careful not to over-mix. 
Bake. Scoop dough using a cookie scoop and place on baking sheet 1-inch apart. Bake for 10-12 minutes, or until just light golden brown. Let cool for 3 minutes on the baking sheet before transferring to wire racks to cool completely.
